Canard à Í Orange

(Serves 4)

For this recipe, you will need:

· 1 duck, about 3 ½ or 4 lbs.
· 2 whole oranges
· 2 liqueur glasses of Grand Marnier
· Flour
· Butter

1) Roast the duck at 375° until light brown.

2) Turn off heat.

3) Simmer for 15 minutes.

4) Add together the juice segment and a Julienne of the skins of the oranges.

5) Flambé the duck with Grand Marnier.

6) Carve and serve.

7) Pour the sauce all over the carved pieces.
