Louis' Lobster Thermidor

(Serves 2)

For this recipe, you will need:

· 2 lobsters
· 3 tablespoons margarine
· 1 ½ tablespoons flour
· ¼ teaspoon nutmeg
· ½ teaspoon salt
· ¾ cup milk
· 1 ½ tablespoons cooking wine
· ¼ cup parmesan cheese

1) Remove meat from shells.

2) Refrigerate both meat and shells for a half hour.

3) Combine margarine, flour, nutmeg, salt, milk, and cooking wine.

4) Simmer, stirring constantly, until the mixture is thick throughout.

5) Remove the meat from the refrigerator, and add to the mixture on the stove.

6) Simmer.

7) Remove shells from the refrigerator, and add the meat mixture from the stove.

8) Add parmesan cheese.

9) Broil.

10) Serve, and enjoy!
