"Frenchie's French Onion Soup"

 

For this recipe, you will need:

· 3 tablespoons of butter
· 3 heaping cups of sliced onions
· 3 cans (14 ½ oz.) of canned beef broth
· one eighth teaspoon of garlic powder
· one eighth teaspoon of freshly ground black pepper
· 6 very dry 1 ½ inch thick chunks of French bread
· 6 thick slices of Swiss cheese
· 6 oven-proof crock bowls


1) Melt butter in a 3 quart saucepan.

2) Add onions and sauté gently over med-low heat until onion rings are limp and clear. This takes a while, but be patient and don't brown the onions.

3) Add broth, garlic powder, and pepper. Bring to a boil and cover.

4) Lower heat to a simmer for ½ hour.

5) Set crocks on a cookie sheet, put bread chunks in the crocks, and cover with boiling soup.

6) Top with cheese slices, and slide under broiler until cheese is bubbly and brown.
