(Serves 4)
For this recipe, you will need:
· 2 cups split peas
· 3 qts. cold water
· 1 ham bone
· 1 cup diced ham
· 1 small onion
· ¼ cup diced celery
· 1 tsp. salt
· ½ tsp. pepper
1) Soak peas overnight in enough water to cover.2) In the morning, add 3 quarts cold water to ham bone.
3) Add drained peas, celery, onion, seasoning and diced ham.
4) Heat to boiling. Reduce heat and simmer slowly for about 4 hours or until peas are soft.
5) Add more water as needed.
6) Serve hot.
